They also aim to show utmost respect for their terroir. They remain family-owned and are now in their fourth generation. The producers work their own vines, harvest the grapes and then press them all on the estate.\u003c\/p\u003e\n\u003cp\u003eAll Delavenne's champagnes are grand cru, utilising the highest quality of grapes in small production runs of just 65,000 to 70,000 bottles per year.\u003c\/p\u003e\n\u003cp\u003eThis champagne is fermented with native yeast in steel tanks. It then undergoes no malolactic fermentation to preserve a delightfully zesty seam of acid running through it. It is also unfined, making it vegan-friendly.\u003c\/p\u003e\n\u003cp\u003eThe grape blend is 70% Pinot Noir and 30% Chardonnay, providing this champange with a beautiful body and texture.\u003c\/p\u003e\n\u003cp\u003eOn the palate, this is complex and deep, with some ripe fruit, freshly toasted and buttered brioche, and apricot pie, plus intense floral aromas creating a fantastic composition. It is autolytic and well developed, with a long mineral finish. This has intense gingerbread, ginseng, citrus and pineapple aromas. It's then very lively and bright on the finish, with zesty, spicy flavours.
