The grapes for their wines grow in a 93-hectare vineyard planted in fine, deep gravel. This leads to very ripe grapes which retain their zesty acid levels.\u003c\/p\u003e\n\u003cp\u003eThe grapes for this wine - Cabernet Sauvignon (70%), Merlot (20%), Cabernet Franc (5%) and Petit Verdot (5%) - were harvested manually then vinified in wooden, stainless steel and cement vats. The wine then aged for 12 months in French oak barrels, of which 40% were new.\u003c\/p\u003e\n\u003cp\u003eThe 2022 vintage was mild and wet, allowing for a rapid flowering and an even veraison. Following this was a hot, dry summer which meant the producers could harvest the grapes early to preserve their freshness and fruity flavours.\u003c\/p\u003e\n\u003cp\u003eEnjoy Château Cantemerle 2022 with duck breast with bacon, cabbage and balsamic dressing.
