The soil is a mixture of gravelly clay, sand and limestone.\u003c\/p\u003e\n\u003cp\u003eThis wine boasts a blend of 60% Chardonnay, 20% Chenin Blanc, 10% Pinot Noir, and 10% Mauzac (a Limoux regional varietal).\u003c\/p\u003e\n\u003cp\u003eThe grapes were picked by hand then pressed in whole bunches. The producers racked the wine at low temperature then conducted a traditional method fermentation, with the first fermentation taking place in vats and the second in bottles. The wine rested on its lees in bottle for 15 months. It was then disgorged three months before launch.\u003c\/p\u003e\n\u003cp\u003eEnjoy Château Martinolles Crémant de Limoux served at 6 to 8 °C.
