He spent his formative years training in Australia and then returned to France to take up the position of General Manager and Head Winemaker at Château Olivier, Grand Cru Classé in Bordeaux. He has recently taken over the running of his family estate in Pouilly-Fumé.\u003c\/p\u003e\n\u003cp\u003eIt covers around 9 hectares (22 acres) in the centre of the Pouilly-Fumé appellation, stretching over the slopes of Saint-Andelain on a typical terroir of flinty clay.\u003c\/p\u003e\n\u003cp\u003eThe average age of the vines is 25 years.\u003c\/p\u003e\n\u003cp\u003eProducers sort the crop in the cellar. They then transport it by conveyor belt to the press.
